Bolognese

Description

A simple Bolognese recipe for excellent chunky pasta sauce with beef, pork, lots of vegetables, and tons of flavor.

  1. Mince the onion and garlic into their own bowls.
  2. Slice bacon into 1/2 inch pieces.
  3. Slice mushrooms into own bowl.
  4. Shred carrots into own bowl.
  5. Chop celery into own bowl.
  6. Warm oil in a large skillet over medium heat, Sauté onion, bacon and garlic in the oil until bacon is brown and crisp (about 10 mintues). Use a slotted spoon to transfer bacon mixture to a paper towel-lined plate to drain.
  7. Cook ground beef and pork in same skillet until brown and crumbly (5-7 minutes).
  8. Stir bacon mixture, tomatoes, mushrooms, tomato sauce, carrots, celery, wine, stock, basil, oregano, salt and pepper into skillet.
  9. Bring to boil, cover and reduce to simmer for 1 hour, stirring occasionally.
  10. While simmering, fill large pot of lightly salted water to boil and add pasta and cook until al dente (8-10 minutes), drain once cooked.
  11. Serve sauce over cooked pasta and enjoy!
