Tomato Soup

Description

This easy tomato soup is my go-to recipe. It's simple and delicious, ready in 30 minutes, and I give leftovers to my kids for lunch. I usually serve it with rosemary bread for dunking.

  1. Gather all ingredients.
  2. Heat butter and olive oil in a large saucepan over medium heat.
  3. Cook onion and garlic in saucepan until onion is soft and translucent.
  4. Add tomatoes, water, sugar, celery seed, oregano, red pepper flakes, salt & pepper and bring to boil.
  5. Once boiling, reduce heat, cover and simmer for 15 minutes.
  6. Remove heat and purée with an immersion blender.
  7. Reheat until hot and add salt and pepper to taste.
  8. Enjoy!
